A Belgian signature with a southern soul
Trained at the Ter Groene Poorte hotel school in Bruges, Wout Bru honed his craft abroad before settling in Eygalières, in the heart of the French Alpilles. It’s there that he opened his first restaurants, quickly earning one, then two Michelin stars, and developing a distinctive culinary style all his own.
His favorite playground? Mediterranean cuisine - celebrated through raw, essential ingredients, worked with precision to bring out their full depth and delicacy.
A defining chapter in Durbuy
Since 2017, Wout Bru has been based in Durbuy, where he joined forces with Marc Coucke to take the lead of the restaurants at the Sanglier des Ardennes. There, he brings to life a gastronomic vision that is bold, creative, and resolutely contemporary - driven by inspiration and attention to detail.
In 2023, the restaurant Le Grand Verre earned its first Michelin star, rewarding an inventive cuisine served in a surrealist-inspired setting.
